Storing
     To ensure the best quality of your cheese for the longest amount of time, storing your cheese properly is very important
  • One method I really like is to wrap the cheese first in breathable paper such as parchment paper, and then cover the whole thing in plastic wrap. Plastic wrap keeps in moisture nicely, but can impart off flavors if left touching the surface of the cheese. And if you use parchment only, you'll lose too much moisture. The combination of the two usually does the trick.
  • Another method is to place some rolled up paper towels in a tupperware container, and then place the cheese on top of the paper. Closing the lid tightly creates a sealed environment that helps moisture stay in, while the paper towels help keep it from getting too wet in there. Be sure to open the container once a day to let some fresh air in.
Molds.....its the good stuff
  • Sometimes you may notice mold growing on your cheeses. For an aged cheese, it's the molds that create the robust complex flavors you so love and its not a problem for them to re-occur after you purchase your cheese.
  • Before serving, just run it under some cool water and if needed bush off with a clean vegetable brush.
  • Let dry fully before repackaging and putting back in your fridge, you may let it air dry or tap it with a clean towel.

Farmstead Goat Cheeses:

Baby Rand
Fashioned after the Baby Gouda, but made from raw goats milk and has a full-bodied nutty flavor. This aged farmstead cheese is unique to America.
We also have a version of the Baby Rand which is aged in cryo-vac. This cheese has the same complex flavors as the natural rind, but is also softer and creamier.
Aged at least 90 days.

Original Rand
Made from raw goat milk. This farmstead cheese resembles a swiss type cheese with the mild taste and evenly distributed eyes. We also have a version of the Original Rand which is aged in cryo-vac. This cheese has the same complex flavors as the natural rind, but is also softer and creamier.
 Aged at least 60 days.

Aged Whole Milk Ricotta
Made from raw goats milk. This farmstead cheese has a milk lemony flavor. Whether soft and creamy when heated or crumbled when cold, this cheese will enhance any main dish, soup, or salad

Artisan Mixed Milk Cheese:

Mixed Rand
Made from both all-natural raw goat and cow milk. This artisan cheese has the mellow buttery flavors from the cow milk and the zing from the goat milk. This cheese really walks around your mouth. Aged at least 90 days.
